Prosciutto Wrapped Asparagus

Personally, I love this time of year. And what’s not to love? Spring always brings such wonderful things; longer days, chirping birds, pretty flowers, and the promise of bountiful availability of local fruits and vegetables. After being cooped up for the Winter eating hearty harvest foods, I am finally looking forward to heading to my local farmer’s market to shop the in-season produce.

Prosciutto Wrapped Asparagus

One Spring delicacy I am more than fond of (I am bordering on obsessed) is fresh local asparagus. Here in Ontario the asparagus season is two short months (May & June), but that doesn’t stop me from eating these flavourful green spears as many ways as I can! From breakfast to dinner, they are sure to make their way onto my plate. And you know what? The humidity controls on my LG crisper drawers keep my vegetables just as crisp as they day I bought them, so I don’t have to worry about my asparagus getting soggy or drying out!

So last week when I was entertaining some friends and family, I couldn’t resist pulling together this simple asparagus side dish; Prosciutto Wrapped Asparagus. This 4 ingredient recipe is not only easy to prepare in a pinch, it is packed with so much flavour. The tender, crunchy asparagus spears are complemented perfectly by the slightly salty prosciutto; making for a delicious balance of flavours in every bite.

Prosciutto Wrapped Asparagus

Nothing is better than vegetables wrapped in meat, and these tasty asparagus spears wrapped in thin pieces of prosciutto don’t disappoint. In a rush? This side dish can be prepared a head of time and served at room temperature once your guests arrive.

Makes: 4 side dish servings
Prep Time: 5 minutes
Cook Time: 8 minutes

Ingredients:
A large bunch of local asparagus (approx 15-18 spears)
6 slices of prosciutto
Salt
Pepper

Method:
1. On a preheated grill (or in a 350°F preheat oven) cook asparagus until tender, about 6-8 minutes.
2. Place 1 slice of prosciutto on a plate. Place 2-4 cooked asparagus on top of prosciutto; lightly wrap around asparagus bundle. Repeat until all prosciutto and asparagus are used.
3. Season lightly with salt and pepper. Serve at room temperature.

Appetizer Variation: Each asparagus spear can be individually wrapped with prosciutto and then grilled. Prosciutto will crisp up over the heat.
